Is this box avaliable in "old work" style?

No, not in a 30 cubic inch capacity. There is the B117RSW, which has the side bracket/access panel, but it is shallower at 17 cubic inches.

How Is This Installed

I get this is a single gang box for appliance outlets, but for the life of me I can't figure out how it is mounted Initially & when wiring is finished. If I could get some details I appreciate it. Thanks

Nail the box to the stud. Wire the box with the door open then close the door. The drywall guy will cover the door with the drywall & the box will accept a single gang cover.

How do I install drywall around this box?

As shown in the product photograph, the section with the hinged lid on the right side is not recessed enough to allow coverage by 1/2" drywall. And since an outlet cover won't conceal the hinged section, how am I supposed to hide the blue plastic lid?

The box is designed for the hinge to be closed prior to cutting the drywall. The hinge is open to allow for easy installation of the device and wiring. Once the device is installed, the hinge should be closed and drywall installed. If you cut the drywall as a two gang, there are wall plates designed with a device on one side and blank on the other for this reason.
