We have a shower with 051337-0070A Ultramix valve - I'm looking for a trim kit that I can install over this style valve.

You would need to replace the rough in that is in the wall. The new trim will not fit a cartridge that is this old.

Every time I turn on the water I hear a small "knock sound" (one knock). Is this normal? The flow of water out of the shower seems to be okay.

Sounds like you may have a hard water hammer, this is typically caused by high water pressure.
