How easy is it to shorten the length from 8' to say 7.5'?

Not easy, and if you do please be sure to do it from the bottom. We used a grinder to make the cuts we needed after trying several different saws and we had a couple of them split.

it is difficult to shorten because it is held together by wires that run through it. The end of the wire is bent over and into the first and last piece of bamboo. We did it but it wasn't easy.

Answer: 
very easy. The fence is held together with 2 wires and the ends are crimped. Just straight out the 2 ends and slide the extra strands off. Cut off the extra wire (leaving enough to crimp the ends) and you are done. You could also use a wire cutter and just cut the wire off at the length you want (again... leaving enough extra to bend the wire to keep the rest of the fence together.)

We built a wood frame and then attached it to the frame by drilling holes and using screws, it turned out very solid. And it looks beautiful.

I don't think so as this is very heavy and attaching it would not be easy. We built a wood frame and attached the bamboo by drilling holes and secured it with screws being very careful and we still had a few split and crack. I really think it is just to heavy to try to attach to top of another fence.
