I am interested in smoking some cheese which means no heat. How does this smoker allow me to do that?

I have a friend who has this model and he had a separate stand-alone attachment with a connecting vent/hose that attached to the smoker unit. I don't see this advertised.

Hello. Your friend has our cold smoke adapter, model BCOLD. This allows the smoke to filter the the hose so you are not receiving eat to your unit.

Does the 31 in Model hold in the heat better and reach higher tempertures?

I am not sure which to get the 31 or 39 inch model, does the 39 inch model go through the pellets significantly faster and can it maintain the same temp range as the 31 inch model. Can both do a full turkey if needed (probably the biggest thing I would attempt to smoke).

31 and 39 inch model goes thru the same amount of bisquettes. They both advance every 20 minutes of smoke time. They both can cook a full turkey up to approximately 18 pounds. They both can maintain the same temp range as well.

How often do you replenish the water? Will the bisquettes get soggy if rained on?

You need to replenish the water every 2-3 hours depending on how fatty your food is in the smoker.Bisquettes will definitely get soggy when they get wet and also will swell so therefore they will not advance into bisquette feeder. They need to be kept out of the environments and in a cool dry place.

what is the smoker chip tray?

The product description for Bradley Smoker 572 sq. in. 4-Rack Digital Smoker, states that this is not included. What is this and does it show up on the inside picture you have psoted? Thanks

Our smokers do not require a smoker chip tray to operate the smoker. We use bisquettes that go into a feeder tube on the outside of the smoker hooked to the small box on the side which is the generator. The bisquettes advance automatically every 20 minutes and sit on the burner inside the smoker tower to produce the smoke. After 20 minutes it is pushed off into a water bowl inside the smoker and the next bisquettes then sits on the burner for 20 minutes.

Rated 3 out of 5 by from Unit seems to be well built and the automatic smoke feed works well. There is plenty of room for ... Unit seems to be well built and the automatic smoke feed works well. There is plenty of room for meat or product to be smoked. The heating element in the unit is 500 watt which is too small to bring the unit up to temp in colder climates. 60 degrees or above and it is fine, below that the unit struggles to break 200 degrees no matter what you set the temp to. After researching forums I found that many people modify this unit to add a second heating element or switch to a 900 watt element....both of which require an upgraded PID controller and convection fan, another $200 invested. This does not mean the product is not worthy of purchase, it just means that in colder climates utilizing this unit in conjunction with your home oven may be the best bet. Attached is a pic of a brisket that was done in this unit on my first smoke. I believe it turned out well but if you expect this machine to be a set it and forget it may find yourself being disappointed.

Rated 2 out of 5 by from Smoke Generator Failed Purchased my Bradley Smoker for a family reunion. First tried it out with some ribs and the unit worked perfectly. The next day loaded the smoke generator up with briquettes for pulled pork and started the smoke generator for warm up. When I returned from my coffee the Smoke generator had kicked all of the briquettes into the water pan, and was beeping as the automatic advance cycled every 30 seconds or so. Called customer service and they recommended that we check the placement (rig) of a micro switch on the unit, seems like this may be a common problem. As it turned out one of the screws in the automatic feed had fallen out causing this issue. Found the screw in the bottom of the unit but not the nut leading me to believe that the nut may have never been installed. Great smoker but have to give it a low rating for quality. If you buy one make sure you try it out a couple of times before a big event. Out of the box reliability may be an issue, although customer service can probably walk you through a repair if you are mechanically inclined.

Rated 5 out of 5 by from Awesome-worth every penny! Tired of struggling to refill the water pan, dropping food, or no smoke after 20 minutes when the chips quit? I had an electric for several years, and after the coil burnt out, I decided to try this one. I can smoke ribs, chicken, whole butts etc and leave it alone. I can also set the temp low and cold smoke homemade sausage or any other meat. With the self loading smoker chips from Bradley, I can use Alder, mesuite, hickory, apple or cherry wood. Constant smoke. I love this thing, its worth every penny.

It was so much easier than my traditional smoker. I was a little worried about flavor but was not disappointed. So easy and hands free. Love setting the temperature instead of guessing. I reccomend this product.

He has made a lot of things in the short time he has had the smoker ... pork shoulder roasts, sausage, bacon, cold smoking cheese, etc. Everything has turned out awesome! The only complaint is the price of the bisquettes.

Rated 1 out of 5 by from Poor quality I received my Bradley Smoker on May 28 2013 and smoked my first food on Sat the 29th. Whole chicken and ribs were perfect. However, after 4 hours the oven temp was only 140F. On July 4th I planned a family cookout. Bad idea. The smoke unit on the digital smoker would not work and after 5 hours the oven temp reached only 130F I had to finish the food on my charcoal grill.On JULY 5TH I returned the smoker.
