I am interested in smoking some cheese which means no heat. How does this smoker allow me to do that?

I have a friend who has this model and he had a separate stand-alone attachment with a connecting vent/hose that attached to the smoker unit. I don't see this advertised.

Answer: 
Hello. Your friend has our cold smoke adapter, model BCOLD. This allows the smoke to filter the the hose so you are not receiving eat to your unit.

Does the 31 in Model hold in the heat better and reach higher tempertures?

I am not sure which to get the 31 or 39 inch model, does the 39 inch model go through the pellets significantly faster and can it maintain the same temp range as the 31 inch model. Can both do a full turkey if needed (probably the biggest thing I would attempt to smoke).

31 and 39 inch model goes thru the same amount of bisquettes. They both advance every 20 minutes of smoke time. They both can cook a full turkey up to approximately 18 pounds. They both can maintain the same temp range as well.

Answer: 
You need to replenish the water every 2-3 hours depending on how fatty your food is in the smoker.Bisquettes will definitely get soggy when they get wet and also will swell so therefore they will not advance into bisquette feeder. They need to be kept out of the environments and in a cool dry place.

The product description for Bradley Smoker 572 sq. in. 4-Rack Digital Smoker, states that this is not included. What is this and does it show up on the inside picture you have psoted?

Our smokers do not require a smoker chip tray to operate the smoker. We use bisquettes that go into a feeder tube on the outside of the smoker hooked to the small box on the side which is the generator. The bisquettes advance automatically every 20 minutes and sit on the burner inside the smoker tower to produce the smoke. One complaint is that the unit didn't come with any smoking biscuits. Temperatures seemed to stay consistent throughout the 4 hours that I smoked a pork roast. My old smoker was hard to regulate. The Bradley Smoker will free him from the responsibility of watching the meat, making sure the smoke and heat are correct, and constantly checking it to make sure it is done completely. The only thing I don't like is.....the digital section of the grill where you enter the time, temp, etc is hard to read because you do the cooking outside where it is bright. I had an electric for several years, and after the coil burnt out, I decided to try this one. I can smoke ribs, chicken, whole butts etc and leave it alone. I can also set the temp low and cold smoke homemade sausage or any other meat. With the self loading smoker chips from Bradley, I can use Alder, mesuite, hickory, apple or cherry wood. Rated 1.0 out of 5.0 by Poor quality I received my Bradley Smoker on May 28 2013 and smoked my first food on Sat the 29th. Whole chicken and ribs were perfect. However, after 4 hours the oven temp was only 140F. On July 4th I planned a family cookout. Bad idea. The smoke unit on the digital smoker would not work and after 5 hours the oven temp reached only 130F I had to finish the food on my charcoal grill.On JULY 5TH I returned the smoker. July 6, 2013
