Answer: 
The manual says up to a 14 lb turkey, but the basket is very small, and realistically, based on my experience, 10 or maybe 11 lbs is the maximum size that will fit in the basket and still cook evenly.

Answer: 
you can use any kind of veggie oil, or mixture of peanut + veggie oil. Peanut oil is preferred because it can be heated to higher temps without starting to smoke. It is more expensive however, probably at least twice or 3X as much as regular veggie oil.

No. I like cotton seed oil, but it is hard to find. Corn oil, shorting, lard all work well. Each has its own flavor. Lard was the old farm standard for fried chicken, Americas Test Kitchen still prefers it.

BUT no more everyone of them has temperature maintenance problems or it only works 1 time and then it barely works at all. I quit, have to find another way to have fried turkey. I DO NOT RECOMMEND THIS PRODUCT, GREAT IDEA, BUT NEEDS SOME MORE ENGINEERING REGARDING THE TEMPERTURE INSERTED COIL. I HAVE FOOLED WITH THESE THINGS FOR AS LONG AS I CAN TOLERATE. SAVE YOUR MONEY, SOMEONE WHO VALUES YOUR BUSINESS WILL COME OUT WITH ONE THAT IS DEPENDABLE AND COOKS YOUR TURKEY AT THE CORRECT TEMP, December 6, 2015

Used combo canola and peanut oil and no injections to turkey. The flavor was BEYOND WONDERFUL and the wings were fabulously crisp and golden. This is the only way to cook a Turkey and especially wings .I will purchase one for a friend next. Only thing neg to say is with all the oil left after the turkey be ready to fry some other things..or store the used oil for another day. The machine is easy to clean and a MUST to buy!!Summer picnics with a group will work with a wings party . January 1, 2016

I highly recommend for excellent turkey frying and as an excellent all around large capacity fryer. December 29, 2015
