These chips are quite small and, when dry, will burn very fast. I soaked mine for at least 30 minutes prior to use and they smoaked for a bit longer than dry but still a bit too small for my preferred smoking use. I'd like to see them chunks, not chips. I used an enture bag while smoking a 4-5# Corned Beaf Brisket for 7 hours. Finished product was GREAT with a noticeable smoke ring on the meat. I would have given a higher rating if the chips were larger than 1/2" wide x 1/4" thick.

I am so glad I bought these wood chips!! They definitely add an awesome smoky flavor to everything you put on the grill
