Edges are not rounded. Might cause chipping. But they are strong enough.

No probably not I think they are to flimsy for that. You need a thicker bar for that work.

Not an expert, but sounds iffy to do without breaking. If breakage is not a problem, then go for it with what ever hammers and pry bars you got.

Yes, this is an excellent choice for removing a backsplash.
If you are trying to remove longer pieces of granite intact, you might consider using multiple prybars spaced evenly along the length of the granite to help keep it from cracking.
