How many thermostats do I need if my total square footage is 312? Can I get away with using only 2 thermostats?

I would recommend two to be safe or you can use a power module once you exceed the 15 amps that is maximum for most thermostats. I would recommend using a thermostat that has a floor sensor as well as ambient temperature. the OJ Electronics models UDG-4999 or the UTN4-4999 are good choices.

As a general rule engineered wood floors are floating not glued. I would not glue it.
