Answer:
WT, Please click on the "Use and Care Manual" link on this product page for detailed information.
This oven has a Proof selection. Proofing bread prepares dough for baking by activating the yeast. Proofing twice is recommended unless the recipe directs otherwise. Once Proofed you would bake on either the conventional or Convection Bake setting.

Check the amperage rating on your circuit breaker. This 40amp wall oven was installed on my 50amp circuit without any problem.

Customer Reviews

27 in. Electric Even-Heat True Convection Wall Oven with Built-In Microwave in Stainless Steel is rated 4.3 out of 5 by 157.
Rated 1 out of 5 by from Poor quality Ordered 4 products from pacific sales all kitchenaid for a total remodel. Built in fridge, gas cooktop, downdraft blower and double wall ovens. So far only the refrigerator is good. The ovens are broken, the fan is stuck and all it does is make a hideous screeching sound. The blower was used, scratched and had a hole in the side of it. It has now been replaced. Waiting for repair or replacement iof oven. Holding my breath that the cooktop works, isn't damaged etc. I would not recommend either Pac. sales or Kitchenaid. Everything has been a struggle. oven lioks nice but obviously it's poorly made. [This review was collected as part of a promotion.]

Rated 2 out of 5 by from Kitchen Aid This is the 3rd Kitchen Aid wall unit in the past 5 years. This unit is very noisy. The oven runs for about a half hour in cool down mode, a waist of energy I feel. The micro-wave makes a growling noise when running and sometimes there is a buzzing noise when the oven and/or micro-wave are running. Not sure this unit is going to make it past warry. Rated 1 out of 5 by from Extremely disappointed After buying this combination wall oven, within 3 months the beautiful blue interior of the wall oven is spontaneously cracking and peeling off. I've never had to clean it yet as it is so new, so there have been no chemicals in the oven. I called Kitchenaid today and was told it is a cosmetic issue and not covered by warranty. I paid over $3500 for it and don't expect a Kitchenaid product of this quality to fall apart. This is clearly a flawed product. I received no help at all from Kitchenaid. I was even informed that I would be charged for a service call because it is not a functional failure.

Rated 2 out of 5 by from 1 month and still not working Oven/Micro unit is beautiful but with first power up there was an arch and the lights blew out of the oven. Everything else appeared to work. Installer came out to fix & it took 2 visits to tell us a new control board would have to be ordered. Now in addition to the oven lights not working the microwave doesn't work at all. Rated 5 out of 5 by from Love It! If you haven't purchased a new oven in 16 years, as I hadn't, this oven might give you a little shock at first. There is no heating element visible on the bottom of the oven and it does take longer to preheat. It also has a "cool down" fan that I found annoying the first few weeks (hint: after you turn off the oven leave the door closed the fan is quieter that way). That said, I love this oven for many reasons. First, in my town home I have a 27" oven tower. I had to get rid of my roasting pans and larger sheet pans because they didn't fit in such a small oven. This 27" unit is MUCH bigger than my old one. I'm guessing as big as a 30" oven might have been in the old days. Second, I love to bake and my cakes have come out beautifully every time on the convection bake. Third the unit seems to stay much cooler on the outside than my old oven, which became so hot on the outside it ruined the wood on the tower. And finally it's really beautiful in my kitchen! The only thing that I would like to see done better is the instruction booklet. I think each model should have it's own instruction manual and I found that some of my guestions weren't answered by the booklet. For instance: what is the rapid preheat, why is it only on the convection cycle and what is the difference between rapid and standard.

Rated 3 out of 5 by from Built in Appliances What a dilemma that one wishes to replace their built in oven/microwave & after it's delivered, you find it's 2" too wide and 6" too short and cannot be inserted into the brick edged area of the old oven/microwave whose microwave is beyond repair! Solution? Drill through the brick with a diamond cutter & hire a carpenter to build up the open space! We liked the old microwave that opened with the door hinged on the left side and was far more roomy. This one in hinged at the bottom so it awkwardly opens toward you. I'd love the space and efficient opening of our former microwave! What a mess & worry we had in dealing with all of this m. Standardized sizes would be most helpful. Rated 5 out of 5 by from Awesome !! This oven combo is awesome! The upper microwave/convection/steamer /crisper/sensor does everything and then some!! The lower convection is unbelievable! It converts your recipe to convection if you want ...you can bake and/or cook on multiple racks at the same time evenly! The cook/bake time with convection is greatly reduced. This oven combo is user friendly. Highly recommend! [This review was collected as part of a promotion.]

Rated 5 out of 5 by from I love this oven! The last oven I had made so much noise -- I was told this was normal because of the electronics. This oven operates the same way (electronics and all) but it is so quiet you can hardly hear it. It cooks great. Love the functionality of the microwave and the lower oven. There was a problem with the installation and was only able to use the microwave/convection (top) section. Had a dinner party and baked a cake without the lower oven. Otherwise would have used the lower oven and not known how will the top one worked other than microwaving. Worked great! I liked the looks of the previous modes (Architect Series) but was not available by the time I made up my mind. I almost gave it four stars instead of five because I'm not wild about the stainless trim but that's superficial and I'm definitely in love with this combination unit!
