How Many of these can you safely wire together, assuming they will be plugged into a normal 120 outlet?

That depends on the amps/amperes of that circuit, most common are 15 or 20 amps....15amp ×120volts gives you 1800 watts....from there add up your wattage on that should be able to run quite a few low watt light bulbs. Most electricians stay under 80 percent of that max.

Ground screw?

With only one brass + silver terminal, where would I wire the ground from my 14/2?

There is no ground screw on this fixture because there are no metal parts that can be accidentally electrified, only the metal parts that conduct electricity to the lamp and attached to the hot and neutral conductor. now the bare ground wires in the box may still need to be attached to the box if it is metal.

what are the extra terminal screws for?

four terminal screws, two for power source and the other two i assume can be wired to provide power to another lamp holder if needed. correct? thanks.

I don't believe that these screw terminals should be used under normal conditions as a termination point to feed through to other devices. The only reason for them is to create a tamper resistant configuration like that used in fire alarm systems, so as to open the monitored circuit when removed and cause a trouble alarm at the monitoring device. I would wire-nut the through wires together inside the box and tail-out the appropriate conductors for the individual light fixture to be terminated on one set of the screws, and tightening the other set as to avoid accidental contact.
