parallel wiring of 2 switches?

I see the leads for each switch are interchangeable. Therefore can I use two of these, wired in parallel, to control a shared exhaust fan that serves two separate restrooms (one switch in each restroom) without damaging the switches?

You are correct. For this application you would have Pole 1 on each Sensor control their local lights, then Pole 2 would be wired parallel on the same circuit to control the shared exhaust fan. The max load is 800W at 120VAC (1200W at 277VAC) per pole, with maximum motor load of 1/4 HP.
