Assuming it is not 25 degrees F outside and breezy, Nope. You should be able to run up over 450 on at least a 40 degree F day without anything in the smoker for cleaning and maintenance (see instruction manual). Turn off valve at tank. Turn on the smoker to let any gas out of the line. Bet you hear a little gas pass thru. Turn off smoker all the way to the right. Then turn on the tank valve. Next, turn Read More

Next, turn on smoker to ignite and push igniter. Should light and you should hear and see a healthy flame underneath the chip pan. If not, and this is a new purchase, call Masterbuilt or take it back to the store. If used, you may need a regulator or the burner is clogged up. Easy to clean out. Most likely there was gas in the line/regulator from turning off the tank and not turning off the smoker before re-lighting. Read Less

It sounds as if your regulator is not functioning correctly. Most people have trouble getting the temperature DOWN to 225 degrees F !!

Make sure the regulator on the smoker is turned off on the smoker before opening the tank valve. If not the sudden rush of gas and through off the OPD and limit gas flow.

This is not normal. When smoking food the temp range can be as high as you prefer although most of the time you want to go low and slow with temp and time. My issue has been keeping the temp low enough when using propane.

If you do not put any water in the water pan, then you can get it to well over 400. That is part of the "Pre-season Instructions" on page 16 of your manual.

Sounds like you want to "set it and forget it." You could try starting it hot to get it smoking and turn it down, but you really should keep an eye on it. If that doesn't work, about the best you can do with salmon in a vertical smoker is to place the fish on soaked planks of the wood you wish to smoke them with, or a neutral one like alder. The moisture in the plank keeps it cool. Alaska Natives hang Read More

Now I'm confused. The Master Built tech answered this question by saying you need to run it at 225 to 250 to produce smoke, but in the operations manual, the smoking chart uses 200 degrees as the temperature for smoking all meats.

To begin with, use chips not chunks. Secondly, try soaking you chips in water for 30 minutes and then let the chips drain for 30 minutes before you put them in the bowl. I had the same problem and could never get an answer so I got rid of it. Hopefully the master tech will answer the question in its entirety. I need to get one now but if there is not a response I will go with another brand.

Rated 5.0 out of 5.0 by An excellent Smoker This was my first smoker and I'm glad I chose it. It is well made and easy to use. One of the main issues with smoking is temperature control. This unit can stay at 200 degrees for longer smokes and go to 350 degrees if you need it. All with very close control. After using it three times I have a system down that works for me. You need to get into it yourself and see what works for you. This unit covers the bases. Some tips I found online that worked for me. Get the replacement gasket for a large Green Egg and apply it to the cabinet to seal the doors. Both components are metal and did not seal to keep the smoke in. A $12 fix. Also, I replaced the chip pan with a second hand 10" cast iron skillet with three carriage bolts added to act as legs above the burner. It made the chips burn evenly and spread the heat out. I had to cut the handle down to make it fit. A $6 fix. October 18, 2016

I like to smoke at low temperatures (225-250 F) but the control dial is very sensitive. I usually spend a lot of time nudging the control dial as it gets too hot or too cold. Of course I had a similar problem with smoking on my grill. But I would not go back to smoking on my grill now that I have this smoker. I can do more meat and I can add water and chips by opening the bottom door without losing a lot of heat in the top where the meat is. October 8, 2016

Rated 1.0 out of 5.0 by Horrible Temperature Control, Don't waste your money or your time. Purchased on 9/11/16, first used on 9/25/16. While assembly instructions are straight forward and pretty easy, the propane temperature control is horrible. Almost like the burner has too many BTU's for this size unit. Tried to keep smoker around 200-215 degrees to smoke a brisket and the ONLY way to accomplish this feat is by barely cracking open the propane tank to allow a trickle flow to the burner, even when the control knob for the burner is set to its lowest point. Otherwise, if you don't do this, the temperature DOES NOT go below 300 degrees. You should not have to touch the propane tank after you open the tank valve. Temperature control should be done ONLY by the gas control valve on the smoker and your air dampers each side and back of unit. Will be returning for a refund to purchase a better quality smoker.
