can the chuck be changed for the keyed type

Yes, the keyless chuck on this drill could be swapped out for a keyed replacement, if so desired. The replacement chuck would need to have the same spindle diameter and thread count as this drill has, of course.

Can I use this drill for mortar mixing?

No, this drill is not suited for that at all. You would want a low rpm drill with a lot of torque for that - something in around 500 rpm's, ideally. A much larger drill. If you search "mixer drill" on the site here, you'll find a couple that are much more suited to the task.
