Questions & Answers

What wood do you recommend?

Adding cut wood to the weber smoker.
Asked by: jeffbl5
Apple for chicken or pork. you can go hickory or oak on chicken but go light, and a bit more for pork. Hickory, pecan, and oak are good for beef. Mesquite is great for beef but be carful a little goes a LONG way and it is easy to ruin a 30 dollar brisket by using too much. Now some tips. Use chunks. do not soak them. if you are in a rural area and your state sends out road crews to cut away overhanging trees or ones growing too close to the road find out where they are and swing by. They should just give you logs you can process. That is how I get all of my oak. and use white oak. Big rounded leaves not sharp ones. If you have a neighbor cutting down a crab apple tree get some of that too, not only will you save them some cleanup crabapple is the best apple wood for smoking. If you can get thick branches they smoke better than trunk pieces because they are denser. Always go for " fresh wood" if possible. the stuff in bags is kiln dried and it kills the flavor, but bags are better than no smoke.

Does this model include a cover?

Asked by: BigDave
Yes, the 18.5" Smokey Mountain Smoker comes with a very nice fitted black vinyl cover with the Weber logo on it. The cover reaches from the top handle to just below the heat shield at the bottom of the smoker. I find it protects the smoker in the rain. At low temperatures the vinyl will be come stiff and may crack if very cold.

I upgraded from the $64 Brinkman model when I found this on sale for $179 on clearance at my local store. Conceptually it is a similar smoker but wow, what a difference. I put in about 125 charcoal bricks at 1pm to smoke some chicken. Chicken was done around 4:30pm after a nice 250 degree sustained smoking session and was delicious as usual. What amazed me was that at 10pm the smoker was still sitting at 250 degrees! On my old Brinkman smoker I had to change the charcoal every 3 hours or so, smoking was constant work and I went through a ton of coals. But this unit just keeps the temperature at the right level for a long time which is exactly what you need! Highly recommend, I probably spent more in Charcoal over the years with the cheaper Brinkman model than I spent extra on this one (even if I would've paid the original $300 price). The lower vent adjustments let you dial in your temperature and you are done for the day (the Brinkman did not have this feature and relied solely on water to regulate temperature I think). Everything else about this unit is high quality as well, and the thermometer pass through is a really nice addition (I have an iGrill 2 with dual thermometers that works great with this). I hope to do a brisket soon! Enjoy!

I just used my Smokey Mountain Cooker for the first time and it worked great. I cooked the best ribs I've ever grilled. I've owned other Weber grills and I think highly of their quality. The temperature held relatively steady with just some minor adjustments with the vents as time went on. I think this is a better way to go rather than an electric smoker. I highly recommend this smoker!

Rated 5 out of 5 by from Works as advertised Last year I was re-gifted one of the cheap smokers that are available and was able to get reasonable results but it took constant monitoring and effort. The Weber is much more sturdy and should last as long as their kettle grills. It is also very easy to use. Follow the directions for loading charcoal and lighting it, adjust the vents, and let the smoker do the work. I was able to make ribs just as good as you can buy in any of the BBQ restaurants I have been to. This smoker is worth the investment.

The temperature is extremely constant and controllable. The temperature gauge is also very accurate which I was not expecting. I double checked it with a thermometer I inserted through the temperature port and they agreed perfectly. I now rely entirely on the gauge. I also thought there would be a small learning curve the first time I used it but I was wrong. It is extremely easy to use. My first attempt was a full rack of pork ribs and they turned out great. The only thing I found is that I use more charcoal than the instructions recommend. I start with a full chimney load and then add fifteen pieces every hour or so. In total I use about ten pounds for an eight hour smoke. This smoker is also a lot easier to clean than my old one.
