Can they be cut and hardwired.
yes if theirs room but most important the power supply must ventilated to avoid heat issues
I have used mine under the microwave (over the range) for over a year. They work well and provide ample light for the stove top. If your concern is the heat from the stove top, it has not been a problem.

You can cut the strips and run a wire either from the power supply or end-to-end to connect the cut pieces or multiple strips. You can buy connectors from Home Depot.
You do not need to solder or get the fancy ends if the light strip is going to be hidden. I just carefully made a loop to make the 90 turn. You do have to be careful to not bend and crimp otherwise they will not work, but if you keep it fluid it works and you can never tell from the outside.
your power supply may not be true DC you may still have some AC rippling still not being filtered out of the supply make sure it a DC supply
