The blades of this knife are formed with 66 layers of high-carbon steel, which are the cause of the unique patterns on the blade of the knife. Don't put this fine knife in the dishwasher. Dishwashers dull the blade of any knife and the ancient metal workers of Damascus will turn in their graves if you drop this in the dishwasher. Wash by hand and keep the blade oiled with vegetable oil and sharp. Sharpen on a whetstone or have it sharpened professionally. Don't put it into one of those kitchen knife grinders.

I love the design pattern on the blade itself and how perfectly it is balanced. I was amazed at how sharp this was, as I was washing and rinsing it off by hand before my first use and it cut me before I even knew it. So be VERY CAREFUL as this is an exceedingly sharp blade! We buy ribs and pork in bulk and then cut them up and put them in bags in the freezer for later use. With the large pork loin, it “cut through it like a hot knife through butter” as the saying goes. Simply putting the blade on the pork loin, it cut it without an ounce of pressure from me, simply the weight and sharpness of the blade nearly severed it all the way through. In the past I would have to take an ordinary knife and saw and hack my way through the ribs, but with this exceptionally sharp blade, it takes extraordinarily little pressure to cut easily through the ribs. It will definitely become a family heirloom to pass on down to my family later on, as I see it out lasting me for sure, although my wife is scared of it and said that she won’t use it, so I highly recommend that you keep this secure if you have any children in the house, and be extremely careful handling it.

This knife is huge and very representative of a cleaver blades. Despite its size, it is fairly light in hand and is great to help trim roasts with thin shavings of meat. It can also cut through veggies in a breeze. It is super sharp -- like, cut off a finger sharp. If you are unsure of yourself, you may even want to use kitchen gloves to use it. For small items...Given the blade, you can easily smush, de-shell and mince garlic. For large items...If you have two similar style blades you can use it to prepare carne asada or carnitas straight off the grill using a rough chop. This is not recommended for this knife -- super sharp, but it can be used in a pinch. Also great for us in cutting elongated vegetables, julienne whatever you want with ease and even use to cut through hard squashes! You should hold the knife in the palm of your hand and depending on what you are cutting, then you will want to pinch the top of it with your thumb and index finger. This makes for more precise and slow cuts. You can use it as a cleaver and do a rough chop, but this blade is so high end, it is not really intended for that. You can also use the length of the blade to your advantage and cut things like pork ribs (any style) getting nice, long and clean cuts with minimal effort. If you only use this type of knife infrequently, you will want to keep it in the box. It comes with a velvety interior and protective tips. If however, you find yourself using this knife like I do, just keep it in one of your cooking drawers and out of the reach of children! It is a very nice tool to have around in the kitchen that is for sure. You can use tools to sharpen it, but I think this blade will only need minimal maintenance. If you do decide to sharpen it, you will likely want to use the wet-stone method with a little oil on the block while doing both sides of the blade. To use sharpening gadgets, in my opinion, will destroy the precision quality of this knife. The knife has a one year warranty

If thin is in, then so is this blade. I have a similar cleaver from another manufacturer, but it has a thicker base blade. It also is sharper out of the factory, and holds an edge longer. Still, if you're going to be chopping vegetables, this thing is more than adequate. It also chops fingers, so beware. It cleans up nicely and has a nice balance to it. Don't use this kind of knife to chop through bone. It's not intended for that purpose. The presentation case is rather nice, and the corners of the sharpened edge both have protectors on them so that the initial unboxing is quite safe.

The blade is very nice, and the knife is very well balanced with the full tang handle. As delivered the blade is exceedingly sharp, and the handle well fitted. The blade is slightly beveled; center is larger than the ends. When needed, a simple flat stone and honing oil to sharpen the blade are all I'll need. Originally sharpened to 15° and I'll keep it that way. Don't put this, or any quality knife) in your dishwasher! They bang around and the dishwasher detergents use caustic chemicals that actually dull the edges and damage the finish. Simply wash the knife by hand and apply a drop of oil to keep the blade looking great when dry. Food grade mineral oil for intermittent use or storage. Olive or vegetable oils can get rancid, but work if the knife is used often. My only criticism is that were two visible fingerprints on one side of the blade; probably when it was put into the very nice presentation box. They polished out and I re-oiled the blade.

BBQ Dragon Damascus Professional Chef's Steel Cleaver Knife is a sharp cleaver for chopping vegetables and meat that's off the bone. Using the big blade to corral a bunch of vegetables into a pot is a delight to use. It has a 15 degree edge angle which is an Eastern or Japanese knife edge as opposed to 20 - 25 degree edge per side angles that are more common as the Western-style . This cleaver therefore has that finer edge which makes it sharper, easier to slice through, but less able to hold the edge with very hard materials. The thinner edge grind will cut through veggies and meat cleanly and effortlessly. I checked it out on some chicken and mixed veggies, impressed as if I was using a chief knife. It is a pleasure to prepare meals using it with a well balanced feel in your hand. In going through bone, a wider 20 – 25 degree grind per side is preferred. It holds its edge longer before needing resharpening. The wider grind angle knife is best for bone, frozen foods, nuts and is preferred as compared to this finer knife. I'll use the BBQ Dragon for soft tissue materials, veggies and meat, and then just touch it up, removing any burrs, with a sharpening steel. This way it will stay in good shape, sharper longer. As for the appearance, the knife is impressive. It is highly polished with a Damascus worked pattern in the large stainless steel blade face. The resin handle complements it with three rivets, a full tang running through to the end and an attractive polished end-cap butt. I don't have a knife like this in appearance. The closest in my kitchen are Japanese chief knives. I've been using an inexpensive Chinese cleaver for cutting bone and frozen foods so this is a good second cleaver in the kitchen for food prep work. I certainly will be taking better care of it for the reasons given.
