Has anyone used it to burn away oil stains in pavers?

No and it isn't a good idea to use equipment that is not made for that type of use. You are putting high heat on a small area which isn't good for the pavers. Get an oil dissolving product that is made for the type of job you want to do.

Where can I recycle the empty tank?

Don't know where you live but here in Phx. it can go into the recycle trash bin. It is made of steel so should be recycled anywhere they recycle products.

No. This is for MAPP gas. Slightly different. There is one made for propane.

can you use a regular torch head with map gas

You can but why would you as map gas is expensive compared to propane and it doesn't give you any advantage to do so.

what's the difference between the 4000 and the 3500?

3500 is propane gas and 4000 is MAPP gas. Not a huge difference (plenty of easily accessed research online about each). Consider what applications you’ll be using it for, then make your choice. If you can use propane, it’s a little cheaper than Mapp gas. I’ve used both from Bernzomatic, have never had a serious issue with either. Hope that helps

Aluminum melts at such a low temperature it is almost impossible to weld and if you try Bernzomatic is too hot to even try to do so. This is a case where you would want to try propane only.

I never liked used something attached to what I thought...
I never liked used something attached to what I thought was an explosive or accident waiting to happen. And although it is still potentially that, after using it I must say it’s super easy and user friendly and I felt safe which I never thought I’d say. There was a video on the Home Depot site showing professionals like chefs and artists using it and it gave me the confidence to try and I’m glad I did.
