I see that some questions state 7 1/4 and the specs s 7 1/2 inch - how wide I can cut my board for 8” brackets

I just measured mine, and the max you should cut your board is 7 3/8". That is the distance between the wall and the small guard. To be safe, 7 1/4" is the right measure for cutting.

How far apart can these be mounted?

Depends on how long of a shelf and what thickness and type of wood you plan to use for your shelves. They are very sturdy brackets so as long as you have a solid mounting, like into a stud, you should be good to go.
