It's a stainless steel surface, easy to clean and deep enough to deep fry, depending on what it is you want to fry or seer. Thick steak (up to 4 inches) absolutely. A whole chicken, nope.

I know exactly what you mean. Ive owned several thoughout my life and only used them as a slow cooker for my roasts. My mom did the same for she taught me this method. While some skillets temps begin at 250, this one begins at warm. So I imagine you can set it very low. If I may suggest, buy one locally at a large chain store with a good return policy. Use it once and Im sure you will find out if it slow cooks the way you want. I am currently shopping for one to do the same thing plus being able to use it to serve in. This one is the prettiest. Now to see if it suits my needs.

This model is 5 quarts and has a 12 in. x 15 in. oval cooking surface.
I have had this happen momentarily and I have adjusted the pan. I feel like it could have been not level on the counter. I also check the plug. So not really sure but I love my skillet and use it every week
