I want to smoke fish as well as brisket and pork shoulder and turkey. That means I need a broad temp range. I'm looking for something that will settle in at about 165 or go as high as 325. Will this unit do it? With two burners, 10K each, I want to buy it, but the fish is a must. Thanks.

Hey Jimbo I'm not sure if anyone has answered your question yet, but I smoked a couple turkeys for thanksgiving and ran this smoker. I wanted a low temp to start out with so I used one burned turned down as low as it would go. It was about 40 degrees outside and the smoker held temp around 150 degrees all night. The only thing is, when using one burner you'll want to switch burners after a while or you'll only burn your wood chips from one side of the wood chip box. It did go a little over 300 degrees when I turned both burners on and had them a little above half way. We've smoked brisket, chicken breast, turkeys and brats. We also did a smoker full of beef jerky. Everything turned out great. Just need to do a little adjusting on temp and cook times.

Can you use wood pellets on this smoker

No. It is designed for wood chips or chunks. Because of the location of the wood pan directly over the burner assembly I would not even use wood shavings as they will dry out and get hot to quickly which will/could result in an internal fire which would most likely ruin what ever you are smoking.

No problems with the temperature here I think those with review with temp problems are not putting enough meat in at a time. This is large enough to have neighbor bring some meat to be smoked with yours. Manufacturer stands behind there products and that should be enough said. My only complaint would be the height of the handles they are a little high and we move unit in\out of barn when not in use. [This review was collected as part of a promotion.]

Rated 4 out of 5 by from New to vertical smokers I recently purchased this smoker and aside from some minor damage to the edge of it everything was there that should have been. So far I've done some beef jerky and 3 spatchcock chickens. A few things that I have noticed is that I've had inconsistent smoke. I am still trying to figure out how to get more smoke going. When I was seasoning it I had plenty, but not after. Don't get me wrong, I did have some smoke just not as much as I would have liked. The other thing I've noticed so far is maintaining a temp under 200 was hit or miss day to day. I was doing this for the jerky. Otherwise I was able to lock in 250 and hold it for the chicken and cranked it up to crisp it up. Everything has been tasty so far and am still learning the temperature control. Also being able to remove the rack guides when not being used is nice & makes cleaning the smoker easier. The 2 door feature is nice so when you need to add more water or wood chips you don't have all the heat loss as a 1 door smoker has. Would have liked to have a larger water pan & wood chips pan, but overall I think it will be fine. It will go on it's maiden smoke this Memorial day weekend 2018.

Ok, so you would think with all the feedback on missing hardware to assemble this thing, they would put some focus on making sure it is included. Just got the unit today and unpacked it to find, no hardware kit. Was told another 5-7 days for the hardware kit to arrive. So, until I can actually get it assembled and use it, Will keep the rating low.

Rated 4 out of 5 by from Good quality smoker, but I'm a bit disappointed with the... Good quality smoker, but I'm a bit disappointed with the 2 burner system. Even with both burners on the very lowest setting, the temp is at 275 degrees. I'm a 225-250 kind of guy. I have to use only 1 burner at a time, but that leaves the flame under only 1 side of the wood box, reducing smoke.

Rated 5 out of 5 by from Smoker is huge. Was a Christmas present in 2017 so... Smoker is huge. Was a Christmas present in 2017 so I have not used it in the summer yet. Cold smoked lots of cheese using the amazing smoker tube in this smoker with excellent results. Smoked chicken was Great. Also cured and smoked my own bacon that was a total success. Great.

It is very easy to control the temp and with the separate doors I can check the water pan and wood chips without effect to the temp up top. This smoker is great!

Rated 4 out of 5 by from My only complaint is that there was a cosmetic dent on the top left edge...the box was not damage... My only complaint is that there was a cosmetic dent on the top left edge...the box was not damaged. This leads me to believe it was damaged before packaging. I have found that you don't just start the fire and pop a fish filet you are smoking in...let it come up to temp and start smoking before you put it in...otherwise it will be done with little to no smoke flavor imparted. The beef brisket that I have smoked was perfect (for me)...a nice smoke ring and the taste of the apple wood smoke was there. I'm looking forward to chicken, ribs and a Boston butt or six. This thing will cook enough pork butts to feed 60+ people and still have leftovers! I bought this model because it is the home version of the commercial cooker that I have experience with that cooks 50+ pork butts at a time. I have not been disappointed with the results or the ease of use thus far. I have not run into the issues some of the other reviewers are talking about. I did put the handles on upside down to facilitate my moving the assembled unit. I am 6' 4'' and they felt more comfortable a bit lower for lifting.
