Is it big enough to smoke a turkey?

It's big enough to smoke a medium sized turkey if you only use the bottom grill. A huge one like over 25lbs, might not fit in the 19" diameter but there's plenty of height so you might be able to make it work. You can actually probably smoke 2 small turkeys at the same time, one on each grate.

Can wood be substituted for charcoal? If so..suggestions pls

I would not use wood as the main fuel source. There isn't enough room to put on logs that would last long enough to smoke anything. You would have to keep opening it to add bits of wood that fid. But you can use wood for flavoring.

Google the 3-2-1 method. Basically use a dry rub at least an hour before. Then 3 hours smoking it uncovered. Then wrap with foil and add your favorite liquid in the foil for 2 more hours. Then unwrap, brush on some BBQ sauce and cook another hour. All cooking at as close to 225 degrees as possible. Internal temp should be around 195 when finished after 6 hours. Also make sure you don't let the water bowl run dry.

I use mine all the time and have not once experienced the issues you are asking about. I am guessing that those who are complaining dont bother to read the directions or just dont pay attention as you noted. Hope that helps!

Excellent Smoker, VERY HOT. Be Careful
The smoker was easy to put together, and I used it the first night as a grill. I read the packaging, and it said not to use it on a deck, etc. so I placed it in the yard and put charcoal in it. As the coal was heating, I looked outside, and the leaves underneath the smoker were burning, so I moved it to a sandy area. This smoker gets VERY hot, and without long legs, the heat transfers directly to the area under the smoker. I think the silver grate used for the coals provides excellent ventilation and increases the temperature. You can control the heat with the vents and keep it at a low temperature or high temperature, depending on your goal. But be aware, this grill gets HOT. After my first use, some of the paint melted down and became tacky on the removable surfaces and the vents. I plan to sand these areas when it cools. This smoker is what I wanted, and I like that I can remove the upper part from the coals when smoking. I was using a modified Brinkman to achieve the same goal but changed to this grill. Today I am smoking a brisket. I have a screwdriver to pry the areas that are sticking. I had to loosen the vents and apply force to move them. I have it in my yard on a concrete pad with bricks to prevent it from getting the concrete too hot. I have some pictures of the smoker and an up-close of the paint that needs to be sanded or scraped off before it's next use. Overall, this might turn out to be the best smoker I have owned, even though I have had to make some adjustments. The size is equal to that of my last Brinkman. I believe the word "compact" is misleading. It is shorter than my Brinkman and can be used as a shallow grill by just utilizing the charcoal area with a grill top. The melted paint can be frustrating because it seals the areas that you want to be able to move. I would suggest the maker address this issue and add taller legs.

This compact smoker is the perfect size for handling food for a small group of your friends. It has 2 levels for cooking providing a good amount of grill surface. The water pan is a great feature. The charcoal pan sits low and can accommodate charcoal or wood and you can add wood chips for smoking. Air draft controls appear to be adequate for control of temperature and cooking time. Comes completely disassembled. There is a package of screws and wing nuts to attach all the pieces. I suspect the wing nuts will prove troublesome since you can't torque them and they will loosen over time. I would have preferred a hex nut and lock washer. There are a lot of them to assemble. The unit sits low on the floor as there is only a short leg to support the unit. Probably too low to sit on your wood deck while cooking. But overall, I think this is a good deal for the price.

First of all this came very nicely packaged, protecting ALL surfaces including the 3 grates! I laid the parts out and it took me about 40 minutes to put it all together. Very easy and clear instructions, all the parts were there and very easy to identify. This is a high quality product that I am sure to use for many many years to come. You can smoke, grill and regular barbecue with this unit. There are several levels of grates to put a lot of food on. Its easy to remove the top and add the charcoal to the bottom tray. It is very sturdy and looks fantastic! I did my initial burn and cook as per the instructions. You will want to lightly oil all surfaces to keep the unit clean and functioning properly. There are dampers to allow a small amount to large amount of air to flow up thru the coals into what you are cooking! This is a SUPER nice unit and gets my Paul's top notch approval! I have included a few pictures. All that is needed to put it together is a Phillips screw driver and your fingers
