The bolt that latches into the mounting bracket is 5.5 inches in length.

I can only tell you that the bolt hole is approximately 5/16" wide. I'd stick with a 1/4" bolt at widest.
I didn't see the video. However, the arm has a peg on it that fits in to one of two holes in the latch arm holder. That allows the arm to move up and down as needed. At least that's how it works on the one I bought.
Gate should hang on hinges not latch
The latch arm is a total 2 1/2 inch long including the bend. The straigth part of it is 1 3/8 inch long which gives you about an inch of play because the latch is 3/8 in width.
If you need installation instruction for such a simple latch you should hire a handyman.
