The four blades make a circle with an outside diameter of approx 2 1/4 inches. So if the pavers are at least that far apart, this should work. However, personally I'd spray w/ Roundup grass and weed killer instead (or lawn weed killer if you want to keep any grass between them). Much easier and faster.
The hole is about 1 to 1.2 inches wide. You don't see it much in grass, but you would see it in bare areas.

I’m 5’5” and have to stoop a bit when using this. Not sure what happened to the other version, but you may have a hard time with the height on this one.
We love ours. One of the best tools ever bought. Just be smart about how you use it. Misuse and rough handling is never a good idea. We have had no problems at all. We have owned ours for several years.
I'm not that familiar with quack grass. If a weed like plantain or dandelion that has a cluster to surround with the with the claws, it's perfect. I believe quack grass has running roots like clover, I use spray of Weed be gone .It limits spray area and chemical travels thru plant to roots and runner roots. I love my Fiskars, no bending and place the weed in plastic bag as I go.

By all means pull out the crabgrass and stop poisoning the environment.
