Hey Jkeith! Wonderful question! The Lock Controls feature on electric, gas, and dual fuel ranges locks out the control panel so that pressing the pads does not activate the electronic controls. This will not keep you from using the burners that use controlled by knobs. However, it will lock out burner controls if they are controlled by electronics (digital controls). - The Lock Controls feature can be set after a Bake or Broil function has been set. Based on our research, we're seeing that the oven display will show the desired internal temp that you've selected and the current internal temperature of the food that the probe is inserted into.
