Any problems with rusting? Is it difficult to find lighting fixture that extends from wall with enough clearance to come past cabinet since it is not a recessed mount?

Yes, you can add more shelves. There are several holes on both sides, making the shelves adjustable.

There are no mirror strips for the sides. The sides are white. It was easy to hang but be careful as the bottom thickness of the back is pretty thin and you could tighten the screws right through it.

can I see the back of my head with the doors open?

we looked at this at the store. And thought it was very nice. But I want to know can you order more shelves. There was peg holes where you could put more. I would like in each section three shelves.

Would adding a 1/8 inch veneer trim to the outside of the box create any issues with opening of the mirror doors?
Nope. You'll be fine doing that.
I'm assuming you are talking about covering the white outer sides of the box that you would see as it hangs on the wall with the doors closed and I don't believe it would interfere at all, the hinges provided on the cabinet have adjustments for up/down/in/out so even if you wrapped the edges behind the doors, you shouldn't have any problems.
