Yes, you need to stain or oil in order to protect the unfinished surface.
the ends are not beveled but the front and back edges have a radius so you wouldn't be able to butt them together, you could set up a straight edge to follow and cut them on a 45.
If you have clamps long enough to hold them and wood glue, it is easily possible. Suggest getting a dowel or biscuit connector tool to be sure the surfaces line up perfectly! Worth the cost, inexpensive tools are available.

Personally, I would not put a finished countertop in a location where it would see frequent rain and or sun. If you do, you'll need to protect it well with appropriate products.
