My unit would be installed perpendicular to my garage joists. Can the ceiling mounting brackets be turned to run parallel to my joists?
David, yes you can install the brackets parallel or perpendicular to the joist. In the assembly guide it will provide instructions on both ways to assemble the ceiling rack.

Can items (Kayaks with a total weight of 100#) be hung off the bottom of the rack with straps, assuming the self weight is <= 500#?
Mark, the ceiling rack was never tested for items to be hung from the bottom, so we cannot recommend doing so.
