Either will fit. How big do you want the Sink? Bigger, less splash on counter. How wide is the 21" deep top? 1" variance on depth is negligible. Width is more pertinent based on the cabinet width.

A glazed underside may be desirable when the underside of the sink is exposed. If it is installed in a cabinet, hidden, it is not necessary. Thank you for choosing Kohler.
The Caxton sink is oval. If your opening is round, the Caxton may not work. The 17" oval sink is only about 13" from back to front. I'm not sure if the 19" Caxton sink would work.
Yes to all questions. White goes well with any color. And I have a brushed nickel faucet. Also this is a good quality sink. I would go with the Caxton 2209 or similar.

It is in the back almost directly under where your faucet will be. The back of the sink is nearly straight down while the rest slopes.
