Will smoking turn the window black? How good is the view during smoking? My previous Masterbuilt (duel fuel, duel door) had the chips catch fire quite often (even with soaking), does that happen with this one?
Asked by: CaptainScott
Thank you for your question! The window on your unit will eventually cover over with a brown film due to the smoke and grease of use. You'll find that if you take some apple cider vinegar to it, it will come right off. Cleaning the window every 2-3 times you use it should allow you to keep an eye on the foods inside. The view is great - you can see the smoke roll off the chips from below as well as make sure your foods aren't getting over-done without having to open the door! You shouldn't have any issues with your chips catching fire in this unit. As one of our other customers mentioned, the best thing to do is wait until the unit is up to temp and you've got it settled in before adding chips and as a helpful hint, if you're worried about the chips being too dry, soak them and then throw them in the freezer in a sealed bag. This will keep the chips wet until you use them. If we can assist you further with any questions, give us a call @ 1-800-489-1581! We'd be happy to help!

The first EVER thermostatically controlled gas smoker for the consumer...and it's INSULATED! No I don't work for Masterbuilt, but I have owned three of their electric models and one of their lower end gas smokers. I burned up the electric models over a period of three years, but I only used them approximately 60-70 hours total. I used the gas smoker twice and had a dickens of a time trying to keep the temperature steady. This ThermoTemp is AWESOME! The entire box is double-walled to keep the smoke/heat inside. I did upgrade it by added Nomex gaskets around both doors, which all but eliminates smoke leaks. You will need to purchase a dual-probe thermometer though. I recommend the SMOKE by Thermoworks. You just can't "dial in" exact temperatures with that big ole dial on the front of the unit. The temperatures range +/- 45-60 degrees using that alone. Now the temperature sits +/- 10 degrees from what you set it at.

I like it better because it heats up quickly and burns chunks and/or chips and produces plenty of smoke. The temp control keeps the temp within 5 to 10 degrees of the setting. It does take about a hour to assemble, and the instructions are very thorough.

I have not smoked anything yet as my review has to do with packaging, assembly and quality of materials. I will update my review when I have had an opportunity to put it fully through a cooking session. Overall, I reviewed a number of brands and models before selecting this one as it showed the most promise. 1. The packaging of the unit is excellent as every component was wrapped in protective foam or bagged or boxed or lined with Styrofoam. Removing each part and unwrapping them, then laying them out for identification and inspection took significant time in itself. 2. After removing everything I found that they had not included any assembly or use instructions. No big deal as I went to their website and downloaded the 36 page manual of which 2/3rds of it were in languages other than English. While the instructions get you to completion, the first 4 pages are safety warnings and the illustrations were not to scale nor did they provide 360 degree views giving you a bit of a challenge matching parts. I was able to successfully assemble the smoker in about 2 hours. 3. Upon completion, everything went together properly except for the lower burner door which sags a little which is a manufacturing defect as that is a welded hinge pin & socket which should align perfectly as does the top door. It does close but you have to finesse it into position. Not sure I want to go through the trouble of returning the whole unit since it affects the entire case and the door. Time will tell. 4. There was Styrofoam residue on the upper door from compression during the packing/storage/shipping process that was ultimately removed during the seasoning process. At first I thought it would adversely affect the unit but it did burn off after seasoning. 5. The smoker can only be used with a 20 pound propane cylinder. Would have been nice to see that information on the outside of the box when purchased. I unknowingly purchased the larger tank and will have to return it. Too bad that it isn't designed for a larger 30 pound cylinder to extend the cook time without running out of propane. A 30 pound tank placed on the ground could be used if the hose were just a few inches longer. 6. I had never used a smoker before and was anxious to smoke some ribs, chicken and salmon. Unlike most cooking appliances, this one does not include a recipe pamphlet or any guidance for smoking foods. You have to turn to the book store or YouTube for that information. Or maybe it was simply left out of the package as were the instructions. Guess I will never know... At any rate, these are my observations for those who will want to purchase a smoker for the first time. Overall, this was a well rated product and brand. I will update my review after I get some cooking done with it.

Rated 5 out of 5 by from Good Smoker This Masterbuilt Thermotemp XL propane smoker is for home use but has so much you would think you're a chef. There are four racks to hold lots of meat. The assembly was tedious. I worked on it for hours. The instructions were confusing which was part of the problem. Many parts looked very small in the picture and it was hard to pick them out. The screws came on a card and were very well marked. A phillips screwdriver and an adjustable wrench were the only tools needed. The smoking temperature is controlled by thermostat. It takes the guesswork out of maintaining the right temperature. There are so many safety features on this smoker. The price is reasonable for this propane smoker. Propane tank is not included.

I have has this product for 3 weeks and this product totally exceeded my expectations. Masterbuilt has a simple step by step You Tube assembly video that made the assemble process easy. They also have You Tube videos on how to smoke just about anything. I do strongly recommend this product.

Took about two weeks to get it. But,it was free, so I’m not complaining. Also it will take a couple hours to assemble, but it’s not difficult.. My box came without a bracket to hold the grease trap. Masterbuilt sent it at no charge in just a couple days. I was dying to use it, so I placed an aluminum pan on the ground under the drain. The smoker is very easy to use., and it works great! The dial for adjusting the temperature is not as accurate as I’d like. I do most of my smoking at 225. And I have adjust it to the middle between 200-225 for that.. I use a battery powered remote thermometer that has two probes. One I put in to the meat, and the other on the rack I’m smoking on and adjust the dial as needed. Once it’s dialed in, it maintains that temperature within a few degrees the entire time. Overall I’m very happy with it, And I think most users will be as well.

The first two were from Amazon and were both damaged and had to be returned. This one was shipped inside another box with more padding and arrived mostly intact. There were only two smallish dents that I was able to repair during assembly. The other bad item was that the front door was assembled with the glass facing backwards. It still works but they're sending me a new one. I used it last night to smoke two pork butts and this thing rocks. The gauge is off, but once I found 225 it would sit within a couple degrees for hours. I started at 2pm. The flame went out for some reason around 1:30 AM, but I restarted it and it settled in at 230 for the next 5 hours. It never wavered. That was measured with a Maverick 732. I would highly recommend this as long as you understand that their assemblers don't care much and you're going to have to fix the mistakes they let go. Once you're past that, it looks like it'll be a good unit. Also nice that it's on wheels so it's easy to roll back in the garage for storage.

It maintained the temperature with the thermostatic control within 5 degrees up or down. With my old propane smoker, I had to keep an eye on it very closely, not with this unit. I like the size and the safety feature about shutting off the gas supply if wind blows out flame. Good unit, I would recommend.
