I would compare the noise it makes to that of a skylight. Light rain shouldn't bother you, but a medium to heavy rain will generate a lot of noise. If using for a residential use, I'd recommend some type of insulation, baffling, or mounting to OSB/plywood.

The steel panels will withstand the heat but they also conduct heat. So anything that the panels are mounted to (plywood strips, drywall, etc) will get very hot. I would check with your local building codes to see what the recommended distance is and if they have any recommended materials to use.
8" what 8" and 12" pitch? is it going over plywood sheeting, wood lath or metal framing? I would contact Metal Sales or local Building department with the structural information they may guide you or refer you to an engineer.

J-Channel (jamb) is not available online but can be purchased at the Home Depot ProDesk at your local store. It will ship to the Home Depot store for pickup. You can also order the panels here, cut to the nearest inch, if needed to make installation easier.
A metal-specific circular saw blade can be used for cutting panels. Turbo-shears work well for fast cutting over the ribs and tin snips are great for detail work. Make sure to brush metal shavings off the panel and always wear eye and ear safety gear. There is an installation manual pdf available on the Metal Sales website.
