Nothing, you might want to check the water level before closing the lid. Too much water creates lots of pressure.

The pop up pressure is metal and in the handle. When pressure is built up it pops up.

My mom's is steel, and mine is aluminum. The only true difference is the weight of the cooker and of course nothing is like your mom's roast.

The Mirro brand is by far the best where pressure cookers are concerned. The last one we had lasted almost 15 years and would have lasted longer had it not been dropped during washing.
