ED, yes this 57040 will replace that model. It is larger in size and output capabilities, but will still work great for replacing that transformer.
Yes, it would be an upgrade in current capacity..500ma up to 750ma, but the output voltage would be the same. It would be a good replacement for a lower capacity xformer.

When we say that it will power two solenoids, that means that the transformer will power two solenoids simultaneously, and the "2 valve spec" that you mentioned refers to the fact that you could put two solenoids on one station, in case you had two zones running during the same duration. This is only referenced on this page because a typical 6-station timer usually only has one powered station at a time.
