A: These are the stringer that support the stairs. For a 36-inch opening you would need 3 stringers, one on each side and one in the center. You can use 36 in wide stair treads or maybe 42-inch wide tread so you have some overhang.
A: I believe you are confusing the vertical height with the stringer length. Typical rise is ~7.5 in, so an 8-step stringer will have 9 rises at 7.5 in or 67.5 in height. The stringer length is the length of 2x12 that you need to cut the riser and is ~8 ft .
