There is no special disposal you need to purchase with this sink. Our disposal flange, which can replace the basket drain at no charge, is designed to fit InSinkErator disposals, but any residential kitchen disposals will work just fine with this sink.
16 Gauge pure, solid copper. The hand hammering work hardens the copper and makes it about as strong as automotive steel.
It is included and is used to cover if you have holes that are not being used. For example if your last faucet had hot and cold handles.

Yes, the sink and apron front is approximately 9" inches tall so you have to cut your existing cabinet to accommodate the sink.
You would have to contact Pfister about this question, you'd be looking for an air gap in Rustic Bronze.
The TD35-01 disposal flange should work.
This sink is hand formed from one continuous sheet of copper, the only seams are on the apron, not in the basin. The welds are done with pure copper, not solder, so it's simply copper bonding with copper. Welds, no matter how well made, are always a weak point in a sink so we keep them out of the basin to increase the lifetime of your sink.
