I'll point out that these screws are 1-3/4-inch long, while two sheets of 5/8-inch MDF would be only 1-1/4-inch thick. You would need to put at least three sheets of 5/8-inch thick together to use these screws.
Yes. Although the head of the screw is small. Other spax interior screws may be better as the screw head is larger. Be careful driving other screws near the edge of the mdf as this particular screw is meant to be able to drive near the edge of an mdf sheet without stripping the mdf.

Probably good for your (1/2") drawer sides, but would consider a courser thread and thicker #10 for the melamine cabinet box (3/4"). HD sells particle board screws or match up to a similar Spax construction screw. Would still recommend a predrilled starter to prevent expanding and weakening the particle board edge.
I was unable to find them in 2 1/4" length. This is from the SPAX site: http://www.spax.us/en/mdf-hardwood-screws.html#.WydXl6dKhEY They only show 2" and 2 1/2" varieties and nothing longer than 1 3/4 in the MDF screw.

I have used these screws in many different materials with no real issues. Particle board is known for chipping and fasteners coming loose. The pine strips are a good idea and will hold better than screwing the slides to the cabinets directly. The best way would be if the cabinets are not installed yet and you screwed the pine strips to the box from the outside of box and into wood strips. ....................... Hope this helps
