If you think a good knife won't change your life, think again. This knife is super sharp (so be careful) and it's also really beautiful. It has a beautiful wave pattern along the sharpened edge. It slices water melons like butter. It easily slices through carrots, potatoes, yams, and meats. How does this change your life you ask? Well, if you can easily slice things in the kitchen, meal prep becomes more effortless and creative. Since I was able cut apples into paper thin slices, I made myself a plate of apple chips and was more interest in eating them. Thinly sliced fruits and vegetables are easier to eat, so you eat more of those instead of unhealthy junk food. And if slicing and julienning fruits and veggies is made effortless by a thin, light, and expertly sharpened knife, you're more likely to actually prepare yourself some healthy fruit and veggie snacks! To be honest, I don't really eat a lot of meat, so I didn't use this knife too much for butchering. But I surprised how useful is was to slice up fruits and vegetables. I had just bough a water melon so I though I'd see how easily I could slice off a ring for a snack. It sliced through it like butter! Better than butter. I don't need my messy serrated water melon knife any more! In fact I can get rid of most of my inferior knives now. I own this one, the 6" classic utility knife, and the 3 /12" paring knife. Just those 3 will have you covered in the kitchen. They are the best knives I've ever had in terms of sharpness, quality, and design. They are thin, but stable and study, the knife and handle are perfectly balanced and the handle fits nicely in your had. And the sharpening design etched on the blade is beautiful. I feel like a Samurai Chef when I'm slicing up little things to put in my ramen. This would make a wonderful gift for anyone, even if they are a Vegan, because vegans and vegetarians are constantly slicing up fruits and veggies to eat. This knife would make a wonderful house warming gift, wedding present, thank you gift, mother's or father's day gift, or Christmas gift. You don't have to be a chef to appreciate and benefit from this knife. This knife will make you a better chef, because it will make your time in the kitchen doing prep so much easier, and enjoyable because this knife is beautiful and sharp! So again, be careful, I simply bumped my pinky against it while it was laying flat and I cut myself. Also, be sure to have a place to store it, like a knife block, to protect it's edge and point. Also, consider buying a high quality knife oil and sharpening block, and read up on knife care. A knife this nice deserves to be cared for properly, and it will thank you by giving you a long life of sharp cutting. Enjoy!

This is a professional chef's quality knife. I am totally impressed with this knife's appearance, balance, quality, and knife edge. Cuts through meat effortlessly, so be very careful! This knife will cut tomatoes as thin as potato chips. It takes virtually no effort to cut and julienne carrots. This knife makes a wonderful addition to any kitchen, fully stocked with knives of not. This knife does NOT come with a protective sheath.

Shun Sori 8 in Chef Knife. Nice looking blade with a high shine. Very sharp. Has a plastic handle vs wood but the plastic should last longer. Does take some care in cleaning. Hand washing is recommended. Can't just throw it in the dishwasher. This is for safety as well as proper care purposes. Instructions cover how to care for the knife and how to cut things. Should store this knife with the blade protected in some fashion so you don't grab it by mistake.

Amazingly sharp knife. The blade on this knife is visually stunning. The wave like detail that is etched into the blade really stands out. The stunning detail of the blade almost makes the plastic material of the handle seem out of place. The handle material does add to the lightness of the knife overall though. The knife itself has a good balance and feels comfortable in your hand. It is effortless to use and definitely makes your work in the kitchen easier and more enjoyable. Designed for cutting vegetable and meat but not recommended for bone or very thick skinned vegetables. Instructions offer great tips for cleaning, using and storing this knife. Recommends hand washing and immediately drying to keep the blade nice and sharp. Has a limited lifetime warranty.

The Sora is Shun’s most affordable offering. The blade is a combination of two sonic welded steel parts. The blade upper is 420J stainless steel, corrosion resistant and comparatively inexpensive. The finish is excellent with mirror polish and no sharp corners on the blade spine. The cutting edge is clad VG-10, a premium alloy with high hardness and excellent edge retention but more brittle and prone to chipping than softer steels. The useful life of a Sora may be less than a knife with hard steel that extends through the entire blade because VG-10 content is limited to the edge part of the blade. After years of use, that edge may be ground away by repeated sharpening. However, excellent edge retention makes sharpening infrequent. Avoid aggressive machine sharpening. The handle is textured black plastic, tapered for easy gripping and somewhat longer than typical. It feels very lightweight, but my sample has held up so far. Slicing feels smooth and effortless. This precision knife requires careful handling and maintenance. The sharp thin 16-degree edge is designed for slicing; it may chip if used for chopping. Hand wash and dry promptly after using. Sharpen with care. Lifetime limited warranty and sharpening for original registered owner. Made in Seti, Japan.
