Based on our official guidance, the Pro Series 22 can produce plenty of smoke using the Smoke setting, which runs at a lower temperature range (160–180°F) to maximize smoke flavor, but it is not designed for true cold smoking. We recommend preheating the grill until it is fully stabilized at temperature, placing the steak on once that heat is consistent, and using internal temperature as the final guide rather than time alone. For best results, many cooks also sear at high heat and then let the steak continue cooking until it reaches the target internal temperature.
