I believe so.
The type of wood or metal you use to make a barn quilt is up to the artist. This would work if you want light colored wood but there are other wood types to choose from. It’s best to visit Home Depot to see the variety available.

Yes, in my opinion I think it would be a good substitute for what was there originally. Tom
use a fine tooth blade. you can run it perpendicular to the joists, just don't lay the joints in the same place as the sub floor.
The panel can certainly be painted and should be strong enough to deter a toddler. The key will be to have enough magnetic force to prevent a toddler from moving the panel. Neodymium magnets would be the way to go. You could use several latch kits, say, enough to support 30 or 40 pounds total, including a a safety factor (the panel itself weighs a little over 8-1/2 pounds).
Yes I have used to to cover ceiling areas. I wallpapered over the underlayment ironically, but paint works too.
We have no experience with granite counter top installation.
