I have one stone and it's thickness varies from 1 and 1/2 to 2 and 1/4 inches
color is just on top, like another answer you can see the pumice inside if stone is chipped or cut. But on the taupe it was a slight color variation.
Apparently there are no samples to be found. Not at the store or provided by the manufacturer. The colors vary quite a bit within the different color/type categories. It's pretty much "the luck of the draw". I've had to return stones and re-order until i get something acceptable. Try your local quarry supplier.

It is roughly 1.5 inches thick, yes. I ordered four for my fireplace hearth, but they look like cheap concrete molded bricks. Definitely not worth $60 a pop. You'd probably do better in investing in real stone, or pouring your own concrete hearth top. That's what I wound up doing is getting stone and cutting it myself.
