Perhaps. I used several sheets in my garage storage cabinets, moisture resistance is good, not sure about heat. The edges are not very stable as the product is MDF, you'd want to cover the edge to prevent it from being raveled or chipped, perhaps seal the edge to prevent moisture absorption; perhaps an aluminum angle set in full bed of sealant. Take care when cutting to prevent edge ravel, masking tape the full length prior to cutting helps.

Yes home depot carried iron on edge banding in white and wood grain, I have used it several times, It is easy to apply with a hot normal iron. If it is too wide it can be trimmed easily with a razor blade, but there is even a special tool to trim the edges. This stuff stays on and looks great.

Yes, you can sand it to make it smooth, but don't believe that you will get it as smooth as regular wood. Also, there is a Melamine Edging that is mounted by using a cloths iron to heat up the glue & mount it to the shelf. This option is your best choice if you are trying to make the shelf look uniform.
