We need to protect it from all of the grease which comes from the big gas fryers cooking deep-fried perch in our outdoor kitchen at or parish Lenten Fish Fry Dinner! Cooking over 1,000 pounds of fish makes a big mess, so we do the frying outside in a temporary shelter, and the tar paper is used to cover the parking lot so the grease doesn't stain it and it is easy to clean up, we just throw it away when finished at the end of the night!
