Smokey Mountain Cooker Smoker features a generous 481 sq. in. of cooking space across two plated-steel grill grates, enough room to smoke several slabs of ribs and a whole roast concurrently. What wood do you recommend?

Adding cut wood to the weber smoker.

Apple for chicken or pork. you can go hickory or oak on chicken but go light, and a bit more for pork. Hickory, pecan, and oak are good for beef. Mesquite is great for beef but be carful a little goes a LONG way and it is easy to ruin a 30 dollar brisket by using too much. Now some tips. Use chunks. do not soak them. if you are in a rural area and your state sends out road crews to cut away overhanging trees or ones growing too close to the road find out where they are and swing by. They should just give you logs you can process. That is how I get all of my oak. and use white oak. Big rounded leaves not sharp ones. If you have a neighbor cutting down a crab apple tree get some of that too, not only will you save them some cleanup crabapple is the best apple wood for smoking. If you can get thick branches they smoke better than trunk pieces because they are denser. Always go for " fresh wood" if possible. the stuff in bags is kiln dried and it kills the flavor, but bags are better than no smoke.

Does this model include a cover?

Yes, the 18.5" Smokey Mountain Smoker comes with a very nice fitted black vinyl cover with the Weber logo on it. The cover reaches from the top handle to just below the heat shield at the bottom of the smoker. I find it protects the smoker in the rain. At low temperatures the vinyl will be come stiff and may crack if very cold.

whats the temptures ranges

Up to 350F, I believe. Smoking temperature is in the 200-250 range. This isn't a grill, it's a smoker - low and slow wins the race.

Rated 5 out of 5 by from Used it for the first time with a pork shoulder. Put a dry rub on it. Had it on for 7.5 hours; he... Used it for the first time with a pork shoulder. Put a dry rub on it. Had it on for 7.5 hours; held the temperature fairly well, having to add 12 coals twice. Since we had to leave for a while we wrapped it in foil and finished it in the oven at 325 degrees. When we took it off a couple hours later, it was a beautiful deep brown color. After we took it out of the over, it had the beautiful pinkish smoke ring. It turned out delicious. I'm going to do baby backs this weekend for Mom's Day!

Rated 5 out of 5 by from Smoking Simplified This is my third smoker and so far is the best I've used. As the title states, this smoker really takes the guesswork out of smoking. Let me start off by stating the WSM comes well packed with very easy to follow instructions. It took me about 30 minutes to assemble the smoker with a solid 10 minutes of me fumbling with the temperature grommet. If there is one take away for Weber, install that grommet at the factory. It found it to be the most difficult part. On to the smoking part, I've found that my WSM 18.5 is easy to dial in temps. Once you set your vents, I've had no problem holding 225, 250, or 275 for hours and no adjustments. On average I've used about 7-9 lbs of kingsford blue and smoked no problem for 8-10 hours. When I'm done with my cook, I open the charcoal door and take off the lid and still have charcoal burning for a couple of hours. If you're interested in installing gaskets for the door and lid do that before your first cook/season. Let it setup for 24 hours and Then run a full load of charcoal with vents wide open to season/coat the smoker. After that, your ready to smoke your meat. Don't debate any longer, go get you a WSM and enjoy your cookouts.

Rated 5 out of 5 by from Best smoker/grill ever made I have recently purchased the WSM in an 18.5” and it is the most versatile grill I’ve ever owned. I was able to keep a constant temperature in the smoker at 225 degrees on my first try! I found that you can put the fire grate and ring on the ledges for the water bowl. This brings the fire high enough to fast barbecue a butterfly chicken to perfection. Then, if that wasn’t enough you can leave the fire grate and ring in the bottom, place a grill grate on the fire ring and have a steak that leaves you wondering how you have lived before that moment! I also have a Weber Genesis that is amazing and wanted to add the ability to slowly smoke food. But, instead I got so much more. The only change I would have made have the upper lid fit on the lower fire bowl. Then you would also have a portable grill. To rebut the review that said they could not keep the WSM at 350, well that’s not what it was built for. However, just last night I built a fire in the bottom, with the middle section and lid on and only the top grate inside. I baked potatoes at 350 for an hour and the thermometer never moved. Thank you Weber, for making a wonderful made in USA product. I appreciate the effort you put forth to stay American and I will always pay for quality.

Rated 5 out of 5 by from Perfect Smoker Got this for Father’s Day (I have an awesome wife). I this replaced my old Brinkmanship smoker, what a difference! The Weber holds it temperature perfectly and only used the original load of lump charcoal to smoke a shoulder that took about 11 hours. Well built and made of heavy gauge metal with a beautiful baked on enamel finish. Also has a huge water pan and two large grates for lots of room for whatever you need to cook. The side of the smoker has a silicone insert that you can insert temperature probes through, I use a Bluetooth dual probe set up, one for the ambient temp and the other for the meat. This is a very well thought out piece of cooking equipment and I highly recommend it.

Rated 5 out of 5 by from Excellent Choice For A Smoker I did a lot of research before I bought this smoker and felt very confident that I was making a good choice. This smoker goes together easily, is designed well with quality parts, and is even used by some in competitions. I did have trouble getting the bottom grill to fit, so I called Weber CS (with no wait time) and we quickly figured out that my smoker was shipped with two top grills. The top grill has handles and is slightly larger than the bottom grill. They immediately shipped a bottom grill to me and let me keep the extra top grill. So I'll have an extra in case I ever need it. On my very first use, it was easy to adjust the temperature and keep it steady. An excellent product with excellent customer service are two things I have no problem paying for. When I get ready to replace my old BBQ grill, I won't have to spend so much time researching before deciding what to buy. Quality products and excellent Customer Service make it easy for me to stick with Weber products.

Rated 5 out of 5 by from Best $300.00 smoker ever! I have been waiting for a couple of years to buy a new smoker. I had a cheap one and it had come to the end of its life earlier this year. I did a lot of research and the Weber SM seemed to consistently have great reviews. I have used it several times now with great results. I broke it in by using it a couple of times without any food in it. This also will help in figuring out how the smoker works and how easy it is to keep a consistent temp for long periods of time. I would suggest 2 books you should buy with this smoker. First is the "Low & Slow" by Gary Wiviottt. Great book on how to use your WSM. The second one I recommend is "Big Bob Gibson BBQ Book". Both are great starting resources and contain awesome information. I would also purchase a Weber 7416 chimney starter and a couple of bags of wood chunks, hickory, apple, & pecan to start with. These couple of things will make getting your WSM up and running and cooking great food in no time. You will not be disappointed in this purchase.. Lewis-

Rated 5 out of 5 by from Glad I bought it!! I've owned my 18.5" WSM for a few months now. I have cooked a couple large pork butts, a few racks of ribs and a Tri-tip roast. I am learning as I go and have been extremely pleased. My first smoker was the gift of a gas smoker. That got me hooked but temperature fluctuation was a nightmare. I have been impressed with how easily this maintains a temp. I really prefer charcoal to other fuels I have experienced. Clean up after each cook is super simple. It fits like a glove on my patio with my three other Webers.
