Easiest thing to do is to cover the pan with foil. Then once it cools, dispose in the garbage. You'll still get a little grease in the pan but it's easily cleaned up without much mess.

So easy to use!

Super easy to use and maintains the temp. Smoked a pork shoulder overnight, 8pm-10am with no worries about temp loss. Maintained 220-230 degrees.

This Is One Kick Butt Smoker!
Customer review from weber.com logo
A few months ago, my son and I visited my daughter in Iowa. She and her fiancé took as to a BBQ restaurant. In my 59 years, I have never had smoked anything. We got a sampler platter and the smoked turkey was brilliant! I turned to my family and said, "I have to get a smoker!" After we got back to Chicago, I went online and ordered the Smokey Mountain Cooker Smoker 18"package that came with a Weber iGrill thermometer. My son put the smoker together for me and the next day I took a giant step into the wonderful world of smokerdome! I did my research on the whole process and viewed many recipes for brining and smoking. And then it was time to dive in. Nervous? Absolutely! And excited at the same time. I equated it to a first time roller coaster rider. I brined a whole chicken overnight with brown sugar, water, salt and Tobacco sauce. The next day after removing the brined bird and patting it dry, I applied a sweet Texas dry rub of brown sugar, smoked paprika, chili, garlic and onion powders, ground cayenne pepper, salt and ground black pepper. I set it aside, and got the smoker started for the first time using my brand new Weber charcoal starter and grill cubes. Once the coals were ready, I added them to the coals and hickory chips in the bottom and got the heat up to the right temp. After 2 to 3 hours my 165 degree smoked chicken was ready. And it was a flavor explosion! Since then I have smoked turkey breasts and Cornish hens. This smoker is a nice family addition to my Weber Genesis charcoal grill! Thank you, Weber for making these amazing products!

Great smoker + great thermometer = great results
Customer review from weber.com logo
I have never owned a smoker, but as I entered retirement, I knew I wanted to give it a try. Since I love my Weber kettle grill, I figured it only made sense for me to own a Smokey Mountain Cooker. I did my research and found the reviews very positive, so my decision was made. I liked the fact that I could use regular charcoal and didn't need to mess with alternative heat sources, like pellets, etc. I conducted a fair amount of research about how to use my new smoker, and learned that the most important accessory would be a wi-fi thermometer. I settled on one made by FireBoard. It can handle six different probes at one time. So far, I have only used two, but I gotta say that it is absolutely indispensable. I decided to start easy and work my way up to more challenging smokes. My first smoking attempt was a bacon-wrapped sausage fatty. The results were astounding. Next, I smoked a pork shoulder to make some pulled pork. This was followed by baby back ribs, and then a very small brisket. So far, everything has been a resounding success. With the combination of the Smokey Mountain Cooker and the FireBoard digital Wi-Fi thermometer, I have really enjoyed my first forays into the world of smoking meats.

Easy & versatile lil smoker - great for beginners
Customer review from weber.com logo
I am a beginner to both charcoal and smoking, and the WSM has been fantastic. It’s easy to set up & easy to use. I’m still learning how to master controlling my temps, and the water pan helps me keep the temp in an ideal temperature range. I’ve also removed the water pan and used it as a grill, and that worked great as well. The only thing I’m trying to figure out is how to make cleaning up after smoking easier, but that just comes with the territory I guess. There are two levels so you can fit a decent amount of food. I’ve cooked a whole chicken and a dozen chicken thighs at the same time no problem. For ribs, I’m going to have to get racks so I can cut them up and stand them up vertically. If I had to do it over again, I would consider the 22”. However, I do love how compact 18” is - it sits on my patio and only takes up a little space. I have zero complaints and would highly recommend the WSM.
