What wood do you recommend?

Adding cut wood to the weber smoker.

Apple for chicken or pork. you can go hickory or oak on chicken but go light, and a bit more for pork. Hickory, pecan, and oak are good for beef. Mesquite is great for beef but be carful a little goes a LONG way and it is easy to ruin a 30 dollar brisket by using too much. Now some tips. Use chunks. do not soak them. if you are in a rural area and your state sends out road crews to cut away overhanging trees or ones growing too close to the road find out where they are and swing by. They should just give you logs you can process. That is how I get all of my oak. and use white oak. Big rounded leaves not sharp ones. If you have a neighbor cutting down a crab apple tree get some of that too, not only will you save them some cleanup crabapple is the best apple wood for smoking. If you can get thick branches they smoke better than trunk pieces because they are denser. Always go for " fresh wood" if possible. the stuff in bags is kiln dried and it kills the flavor, but bags are better than no smoke.

Does this model include a cover?

Yes, the 18.5" Smokey Mountain Smoker comes with a very nice fitted black vinyl cover with the Weber logo on it. The cover reaches from the top handle to just below the heat shield at the bottom of the smoker. I find it protects the smoker in the rain. At low temperatures the vinyl will be come stiff and may crack if very cold.

whats the temptures ranges

Up to 350F, I believe. Smoking temperature is in the 200-250 range. This isn't a grill, it's a smoker - low and slow wins the race.

Rated 5 out of 5 by from Right in every way I had never owned a smoker before and wanted to make sure I got the right one that'd do the job and last a long time. I've always been a gas user, never been a charcoal user, but it was simple to learn how to use charcoal and control the temperature with the Smokey Mountain Cooker Smoker. I chose the 18-inch for more cooking surface and the price point is more compelling. I like the two tier cooking surfaces so I can cook more and the height of the 18-inch means less bending over if I got the smaller version. All of the parts are strong and look and feel of high quality. No flimsy material. A big factor for me was I didn't want to have a smoker that I'd have to use electricity for; it doesn't seem right to plug in a smoker/grill. I like that I can use charcoal and have this smoker take care of itself for 14 hours. Plus this is Made in USA! I don't know why it isn't advertised on the site as being Made in USA, but it was a big reason why I picked the Weber. Why buy something foreign that's cheaply made and will need to be replaced quicker when I could spend a little more for a better product that'll last a lifetime? No brainer.

Rated 5 out of 5 by from Smoking Simplified This is my third smoker and so far is the best I've used. As the title states, this smoker really takes the guesswork out of smoking. Let me start off by stating the WSM comes well packed with very easy to follow instructions. It took me about 30 minutes to assemble the smoker with a solid 10 minutes of me fumbling with the temperature grommet. If there is one take away for Weber, install that grommet at the factory. It found it to be the most difficult part. On to the smoking part, I've found that my WSM 18.5 is easy to dial in temps. Once you set your vents, I've had no problem holding 225, 250, or 275 for hours and no adjustments. On average I've used about 7-9 lbs of kingsford blue and smoked no problem for 8-10 hours. When I'm done with my cook, I open the charcoal door and take off the lid and still have charcoal burning for a couple of hours. If you're interested in installing gaskets for the door and lid do that before your first cook/season. Let it setup for 24 hours and Then run a full load of charcoal with vents wide open to season/coat the smoker. After that, your ready to smoke your meat. Don't debate any longer, go get you a WSM and enjoy your cookouts.

Rated 5 out of 5 by from Perfect Smoker Got this for Father’s Day (I have an awesome wife). I this replaced my old Brinkmanship smoker, what a difference! The Weber holds it temperature perfectly and only used the original load of lump charcoal to smoke a shoulder that took about 11 hours. Well built and made of heavy gauge metal with a beautiful baked on enamel finish. Also has a huge water pan and two large grates for lots of room for whatever you need to cook. The side of the smoker has a silicone insert that you can insert temperature probes through, I use a Bluetooth dual probe set up, one for the ambient temp and the other for the meat. This is a very well thought out piece of cooking equipment and I highly recommend it.

Rated 4 out of 5 by from It's not rocket science The best "first smoker" that you can buy. Take away the mid-section and you get a charcoal grill if you find out that you don't really like smoked meat (it happens). Add a digital airflow control system and you get a premium smoker true to the "set it and forget it" spirit of beer 'n barbecue. The versatility in this smoker is mind boggling thanks in no small part to after-market parts from its dedicated community, and the only real drawback I can think of regarding my smokey mountain is that it's not QUITE big enough to hold a full brisket sometimes - and when it does, it usually doesn't come out evenly since brisket is a cut that's thick at one end and thin on the other. (there IS a 22.5 inch smokey mountain) Other drawbacks, such as the water pan being a grease collector that stops actually evaporating water at a certain point, can be easily bypassed by simply placing a bowl of water on the cooking grate instead. I've had my smokey mountain for just over a year now, the different components have definitely warped slightly from wear (maybe about an eighth of an inch - still no real leakage issues though), and some of the screws on the bottom feel loose with dirt between the washer and the pit, but I can't imagine this thing breaking to the point where I can no longer fix it.

Rated 5 out of 5 by from Can't Believe I Waited So Long To Purchase!!! I have been contemplating purchasing this WSM 18" for the last three years. I finally bit the bullet (pun intended) and I can't stop kicking myself for not purchasing it three years ago! I prefer charcoal smokers to electric smokers. Up until now I have been using my 22" Weber Kettle Charcoal grill with indirect cooking to smoke food. Besides the great taste, I love the "tending" to the smoker that charcoal smokers require. However, I have to say that the WSM is great at holding temp once you get to the temp you desire and then close the bottom dampers to approx. 25%. This is what I love most about this product. Plus in my experience, there is no better quality in grill products as Weber.

We had a smoker from another manufacture for many years, It did smoke meat, but required constant attention as it would never stabilize the temperature very well. We bought the WSM 18 a month ago and have smoked meat twice since. First smoke we did two 6+ lb Pork Shoulders for a July 4th gathering. The WSM held 255 deg with very little attention. 12 hours after the meat went on, the internal meat temps were 200 deg. Text book cook, and delicious pork. Second smoke was country ribs and chicken thighs. Again the WSM excelled. The ribs are a new favorite meal for us! The chicken went to a church social were they received praise from everyone. Love this smoker.

Rated 5 out of 5 by from Excellent Choice For A Smoker I did a lot of research before I bought this smoker and felt very confident that I was making a good choice. This smoker goes together easily, is designed well with quality parts, and is even used by some in competitions. I did have trouble getting the bottom grill to fit, so I called Weber CS (with no wait time) and we quickly figured out that my smoker was shipped with two top grills. The top grill has handles and is slightly larger than the bottom grill. They immediately shipped a bottom grill to me and let me keep the extra top grill. So I'll have an extra in case I ever need it. On my very first use, it was easy to adjust the temperature and keep it steady. An excellent product with excellent customer service are two things I have no problem paying for. When I get ready to replace my old BBQ grill, I won't have to spend so much time researching before deciding what to buy. Quality products and excellent Customer Service make it easy for me to stick with Weber products.

Rated 5 out of 5 by from Wicked awesome smoker I have had this smoker for a lil over a year now and has never let me down I have smoked all types of meats and being in Boston I have smoked in all types weather from making a pork loin and chicken wings in February during the super bowl to smoking corned beef of ST Patty’s Day to a smoked Turkey on thanksgiving and all kinds of different stuff over the summer this smoker is easy to maintain temp wise and cleaning wise a perfect fit for me into my grilling family I also own kettle grill and a propane grill but must say the flavor this smoker adds to the meat is outstanding make sure u use Webber flavored wood chunks unsoaked for ultimate flavor Thanks
