Wind: We get a lot of wind in the desert where I live. Assuming assembly in a square with no open panels, should the fence withstand 40-50mph gusts? Anyone have experience installing in windy locations?

I only need one more section and one more stake. Is there anywhere i can purchase just what i need?
I would contact the company directly. Usually they are more than willing to keep customers happy and you'll be able to purchase one more panel. In the meantime, use some chicken wires to cover the open gap while you await the additional panel.
Is there a similar type of fence panel with smaller grid squares (to keep rabbits out!)
These fences really look great. I have found that lining the inside of the fence with chicken wire keeps rabbits out. If you don't like the way that looks, I know folks have had success with a few fake rubber snakes (no kidding!) or an animatronic owl.
Can you get extra stakes? I need to reinforce several gaps in a hedge.

Only 5. Why an odd number, I do not know. I feel it should be 6 for the price.

Each panel measures 20.75" down the middle, 25.5" on the sides, and 28" across the top. The metal panel has 2.5" squares. The stakes measure 38" long and about 3/8" in diameter. The stakes have 12.5" at the bottom that can be inserted into the ground.

The squares are about 4 x 6 inches. A small rabbit or squirrel will have no problem getting in
