Q:Want to connect two side-by-side but don't think the official connectors are strong enough due to short width. Can I insert a steel rod into the horizontal bars and have it span both guards? If yes, then what diameter rod would fit?

The coupler inserts are are square to fit within the window bar extensions. Would require 3/8" square rod. Not sure how 3/8" round rod would respond.

Q:is the quick release mechanism sold separately? And if so, how much is it and how hard is it to install? I want the bars for security but want the quick release in case of fire and to satisfy my homeowners insurance policy requirements.

In this application I would suggest using the flush mount brackets. Link provided. Could be possible to take one of our mounting brackets and weld to a set of gate hinges. I have attached a link to our quick release unit that comes with a set of window bar hinges. https://www.homedepot.com/p/Grisham-Window-Bar-Quick-Release-Kit-WBQR/202770892 Perhaps copy that concept with either of the following mounting brackets: Inside mount, Flush mount, or 3" inch stand off bracket. A: No! Not these!
These are not a recommended choice for all areas of the home and especially NOT for bedrooms.
These are bolted on and are difficult to get through or remove and can be used in garages and OTHER areas of your home that are not normally slept in.
Here is an example of one kind of window bar with a release...

... and then there are kits to modify others so they do have a quick release. I'm afraid I don't have any experience modifying these guards and I think its probably best when you are buying NEW, to just purchase window guards that do have a quick release.
If I had a home with those classic old (Spanish-type) window guards I wanted to keep, I would probably purchase a kit or modify them myself.

A: There is no safety release. As far as the Life Safety code goes, these are not compliant as egress devices.They are designed as security devices and will not allow passage in case of a fire or other type of emergency.

I use the 3" stand-off mounts so it moves the bars away from the window to make them easier to clean.

I'm sure there would be other issues to consider also like drapes or shades or blinds. I use "mini-blinds" that fit easily between the bars and the glass, easily adjusted and raised for cleaning or opening the window..
I chose all WHITE guards, blinds and painted walls and IMHO, it all looks great as well as being functional.
