How tall is this shelving unit? ...Do you sell a shelving unit that is 30" wide, and 28-30" deep, and 72" or so high?

It says it is 30x14. Does that mean the shelves or the whole unit is 30 inches wide.

It would fit snugly in a 30 1/8" opening, or 30 1/4" for sure.

Can a shelf invert to add a "lip" effect to the shelf?

No, the holes in the corners are slightly cone shaped so that they can fit over the holders where you're placing the shelf and stay put. Inverting them would either not work at all, or create an extremely unstable shelf.
