Hello Zac, and thank you for your interest in Trex! The 8' square edge is an exclusive in stock option for Home Depot stores. The special order materials are available in 12', 16', and 20' lengths in grooved edge or square edge, therefore you would need to special order a 16' grooved edge board to create 2 - 8' grooved boards. Yes, these boards are good for treads and edging. You will just have to do some mitring to cover the cut ends from view.

Yes but only if you caulk the gaps with a clear caulk. The gaps will leak between the boards otherwise.
