Shelving is not included with the Tahoe. If you are referring to the loft then yes. It can be removed but you must keep the 2 joist headers. These prevent the 16ft. walls from spreading out. Richard Best Barns

As stated by the manufacture- the slab should be exactly 12'x16' When I built mine, i didn't want the KD framing sitting directly on concrete, so I set J-bolts into the concrete around the perimeter and used a roll of sill seal foam and 1x4 PT as my sill plate. Because of this- i followed the directions in the manual about having the exterior wall panels extend down 3/4" beyond the framing, so that the siding overlapped and covered the PT sill plate. It worked out perfectly.
The Tahoe garage kit cannot be altered as you describe. You can construct the kit upon a 36" high stem wall to achieve what you are asking. Richard Best Barns
Erik, Customers certainly have modified our existing kits as designed but I have not heard of anyone making such a change to the loft. There would be significantly more material to accomplish what your are suggesting. Richard Best Barns
