A: Yes, it comes with 6 racks and they have 12 positions to put them in. Plus rib racks and ham/sausage hangers. So it's pretty universal. I'm very happy with mine.

A: It does not come with a water pan, but it has 6 shelves and 12 positions you can place them in. So, yes, one of the shelves could easily be placed very low and you could put your own water pan on it.

A: The basic smoker is 42x14 including the handles. The legs angle out a little, so the actual footprint would be a bit more. I can't say exactly because I put wheels on mine. But I doubt it would go over 48x18 total.

A: Never tried that. My only real complaint about this cooker is that it does seem to require some babysitting. I have been able to mitigate a lot of that by using lump charcoal and traeger pellets as the heat/smoke source along with some real wood for heat once smoking is complete. Didn’t have good luck with regular charcoal.

The length of time depends on the amount of charcoal, the amount of food and the outside temperature. With 5-6 lbs of charcoal (roughly 100-115 briquettes) & 1 lbs dry wood chips in a 45 degree climate, the minion method should burn the charcoal for about 4-5 hours – assuming that the user is starting off with no more than 20-25 fully lit briquettes.-GHP Group Customer Service Team

A: Nominally they are 14x24, but you have to knock off about a half inch on each side for the tracks, so usable is 14x23. It comes with 6 racks and 6 sets of tracks, but there are 12 locations to put the tracks. The tracks just lock in like shelf brackets, no tools needed, so you can change them any time you want. You can adjust it to fit just about anything.

A: The temp gauge on the front runs from 150 - 350F. I checked it with a digital thermometer and it was pretty accurate. I had no trouble keeping it in the 200 - 250F range while smoking with it.
