A: Though fully cured epoxy is food safe, it is not edible. So if you use a knife on your butcherblock, you may chip out small pieces of epoxy which will embed themselves in your food.
I suggest a mixture of beeswax and mineral oil. The downside is it has to be re-applied occasionally, though it really perks up you counter.

A: You' re probably wasting your money if you buy this epoxy for 1/4" inch pours. Deep pour epoxies are hella more expensive least. Plenty of thin pour Epoxy options out there....

A: Mica powders are the additives you want to use. They come in many different colors. Wisebond has an entire line of colors including mica powders, glow in the dark colors, and liquid pigments.
